Description

This is a nice light dish to have on a hot summer day. It is also great because it keeps the kitchen cool because the oven or stove are not needed.

Ingredients

  • 2 cabbage heads (medium)
  • 1⁄4 c lightly packed fresh parsley
  • 1⁄4 c lightly packed fresh basil
  • 1⁄2 c olive oil
  • 1⁄2 tbsp balsamic vinegar
  • 1⁄2 tbsp mustard (whole grain or the like)
  • 1 c raisins
  • 1 c sunflower seeds
  • 2 c grated carrots, onions, beets
  • 1 bn peas

Instructions

Combine oil, herbs, vinegar, and mustard: Blend together. Chop cabbage, toss with half of raisins, seeds, and grated roots. Garnish the bowl with the leftover ingredients.
