Crisp vegetables and sweet mango make these the perfect treat for a hot summer's night, when the last thing you want to do is turn on the oven. The noodles are the only things that require cooking, and they're done in 10 minutes.
Slice all the veggies and mango into very thin slices. Chop up cilantro leaves.
Boil some water either on the stove or in a kettle. Put the noodles into the water. Watch the noodles don't get over cooked, 10 minutes at the most! Drain the noodles and cool them under cold water.
Fill a round pie pan with hot water(tap water is fine) and get out your cutting board. Put 2 sheets of rice paper into the water, let it get flexible then lay it out on your cutting board. In the lower two thirds of the roll place some noodles and a few chopped nits. Then layer the fruit and veggies on top, topping it off with a little cilantro. Fold the left and right sides, then take the bottom and roll it up. Don't worry if you don't get the hang of it! Keep chilled until serving time at which time you mey want to dip these treats into a peanut or tamari ginger sauce.
